My Mom will be happy to see that I made some yummy mango jam today! She is usually the jam maker of the family, from whom I beg for Red Pepper Jelly or Cherry Rhubarb Jam. However, with so many mangoes falling from our tree and our freezer pretty much full of them, I decided to try another way of preserving them which didn’t involve buying another freezer. So I found the simplest mango jam recipe that I could find: 2 lbs of mangoes (about 6 cups), 1/2 cups of sugar and 3/4 cups of water. I added a dash each of nutmeg and cinnamon. That’s it – no Certo or anything! We always save our jars here in Panama, so I just sterilized them and recycled them into jam jars. So although some may say ‘Artichoke Hearts’ or Maille Dijon, they actually contain sweet, sticky, mango jam :-). Can’t wait to try it now!
